Roast Stuffed Great Bustard with Eel Sauce
Ingredients:
One whole Great Whiskered Bustard
Two pounds of eels from the Abbey Stew Pond
100 Chestnuts
30 Goose Eggs
Three tablespoons ginger
Instructions:
Whisk together the eggs, pounded chestnuts and ginger. Boil and skin the eels and flake the flesh into the mixture. Stuff the Bustard and spit roast until the juices run golden. Serve with spiced wine.
